Pumpkin Pie Energy Bites

These festive little Pumpkin Pie Energy Bites are the perfect thing to pop in your mouth when you need a hit of energy and flavor. They also happen to be good for you with a variety of ingredients that provide healthy omega-3 fat, fiber, protein and plenty of vitamins including A, B and C. 1. Combine the following in a food processor or bowl of a stand mixer:
1/2 cup almond butter
1/2 cup almond flour
1/3 cup canned pumpkin
2 Tbsp. Maple syrup
2 Tbsp. flax meal
1/4 cup pecans
1/2 tsp pumpkin pie spice
1 tsp cinnamon
2 Tbsp. unsweetened shredded coconut
2. Pulse or mix until thoroughly combined. Roll into 1 inch balls (should make about 20) and place on a baking sheet or plate lined with parchment or foil. Chill for 20 minutes.
3. Place an additional 2-3 Tbsp. Shredded coconut in a shallow bowl and roll each pumpkin bite to coat. Store in the refrigerator for up to 1 week.
