Shrimp Tarts

These Shrimp Tarts are an impressive holiday appetizer and always a crowd pleaser. They're also easy and healthy with plenty of protein and antiinflammatory benefits from parsley, garlic and lemon juice. Olive oil based mayonnaise provides the right amount of fat, and cayenne pepper adds a nice little kick that's great for digestion and immunity!


1 1/2 pounds chopped cooked shrimp

1/2 cup chopped green onions

1/2 cup finely chopped parsley

1/2 to 2/3 cup olive oil based mayonnaise

2 Tbsp. Capers

1 tsp lemon juice

1/2 tsp salt

1/4 tsp ground cayenne pepper

1 clove garlic, minced

Stir thoroughly and divide shrimp mixture into 30 mini phyllo tart shells (I use the Athens brand).

Garnish with fresh chives if desired.
