Southwestern Quinoa Salad

It's no secret that I love a good quinoa salad, and this one is the perfect blend of flavors and textures! Quinoa is a powerhouse food that's technically a seed, and has a bunch of protein, fiber and nutrients. Mixing it with other superfood ingredients takes it to the next level, This is a great meal prep recipe for lunches, the side dish you'll want to bring to every summer cookout and the one your friends and neighbors will ask you for. Give this a try and you won't regret it!




INGREDIENTS


- 1 1/2 cups of cooked quinoa

- 1 cup cherry tomatoes (sliced in half)

- 1 cup dicd bell pepper

- 1/2 cup black beans

- 1/2 cup diced red onion

- 1/2 of a diced avocado

- 1/4 cup chopped cilantro


For Dressing: whisk together...

- Juice of 1 lime

- 1 Tbsp olive oil

- 1/2 tsp cumin

- 1 tsp chili powder

- salt and pepper to taste



DIRECTIONS


Mix all ingredients together, top with dressing and enjoy!
