Strawberry Oatmeal Pie

Pie for breakfast? Yes, please! This Oatmeal Breakfast Pie has won the heart of my 3 year old. It’s is a quick and easy breakfast meal prep recipe that lasts for days. Whole milk Greek yogurt adds a punch of protein and fat that makes this a satisfying and healthy choice. Add a hard boiled egg on the side if you’re looking to up your protein game.




INGREDIENTS

- 2 cups raw oats

- 1 tsp baking powder

- 1 tsp cinnamon

- 1 tbsp coconut sugar

- 3/4 cup milk (can sub almond, cashew, etc)

- 3/4 cup whole milk greek yogurt

- 1/2 tsp vanilla extract



DIRECTIONS


Preheat oven to 375 degrees.


Combine 2 cups of raw oats with 1 tsp baking powder, 1 tsp cinnamon, 1 Tbsp coconut sugar and 1/4 tsp kosher salt.


In a separate bowl, combine 3/4 cup milk (can sub almond, cashew, etc), with 3/4 cup whole milk Greek yogurt and 1/2 tsp vanilla extract.


Combine wet and dry ingredients and pour into a pie dish greased with butter or coconut oil. Arrange sliced strawberries 🍓 (or really any fruit - peaches and blueberries would be fantastic) on top and sprinkle with shredded unsweetened coconut (optional but delicious).


Bake at 375 for 30 minutes.
